Ingredienten:
*270 bloemhoofdjes
*750 ml water
*1 hele (biologische) citroen, gewassen en in schijfjes gesneden
*750 gram suiker

Pick the dandelions without stems, preferably in your own garden or in a place where they have not become contaminated. I kept them in the freezer while collecting them and that went well.

Werkwijze:

Smakelijk,

Art Journal 60 is a visual diary in mixed media.
Materials used are watercolor paint, gesso, collage, fineliners, eco-printed paper and watercolor pencils.

Suddenly they’re back, green tufts with bright yellow flowers: Dandelions!
What do you think when you see them? Are they weeds that must be removed quickly or do you think of the wish you can later make when you blow away the seeds?

For a long time I had the first thought , but after I got to know the flowers a bit better I started to appreciate them and now I even think they are very beautiful.

Did you know that the plant is edible? Even the flowers! You can make delicious dandelion honey from them. The name is a bit misleading as it is obviously not real honey.
For those who want to give it a try, the recipe is below.

Recipe for Dadelion Honey

Ingredients:
*270 flower heads
*750 ml water
*1 whole (organic) lemon, washed and sliced
*750 gram sugar
*clean empty jars with lids

Method:
Boil the water, add the flower heads and lemon slices.
Leave to cool and set for 10-12 hours.
Pour the mixture through a cotton cloth, straining out the flowers and lemon slices. Wring the cloth well so that the last trace of moisture is also squeezed out. To do this, fold the four points of the cloth inwards and make a rotating movement so that a ball of compressed flowers remains.
Add the sugar to the water, stir well and bring to the boil.
Now let it simmer until you have a liquid that has the consistency of liquid syrup. It also gets the same color.
This can take several hours, so keep stirring regularly.
While it is still hot, pour the dandelion honey into clean jars, immediately put the lid on and let it cool.
This mixture will keep for several years.

Enjoy,
